DEPARTMENT DESCRIPTION:

At CHA, our food service department plays an important role in the satisfaction of our patients and colleagues. Food service team members enhance the patient stay by delivering three quality meals a day to the patient’s bedside. Our Expressly for You program assigns each patient a dedicated Food Service Host/Hostess to take care of all of their dining needs. Meal orders are taken bedside and entered electronically via a tablet computer. This system interfaces with the hospital medical system, allowing for our hosts/hostesses to understand each patient’s unique dietary needs. In addition, the food service department operates a recently renovated cafeteria that caters to staff members and the general public including a salad bar with fresh and local ingredients, hot soups made fresh daily, a deli station, and an entrée station featuring favorite dishes. There is also a mix of snack and beverages, along with full daily breakfast offerings.

Summary:

Plans and performs large scale quantity cooking which can include meats, vegetables, fish, hot and cold salads, soups, sauces, gravies, eggs, cakes desserts and breads using a variety of preparation and cooking methods. May also supervise or perform duties less skilled in nature relating to food preparation and storage, such as but not limited to, cleaning, and sanitizing workstations, food preparation equipment, and food storage equipment such as coolers or racks.

Job Duties:

· Follows recipes

· Takes temperature at scheduled times accurately and consistently

· Sanitizes work station

· Properly uses food preparation equipment on a consistent basis

· Has food ready at scheduled time

· Uses plate and pan garnish on a consistent basis

· Unsatisfactory foods are not serviced i.e. taste, temperature, etc.

· Prepares grounds and puree from scratch

· Keeps in contact with tray line supervisor to make sure adequate replenishing of entrée, sides, etc.

· Works together with cafeteria management and personnel to make sure no “run outs”, especially cleans and sanitizes counters and work stations after use

· Maintains walk-in coolers in a clean organized manner

· Properly wraps, labels, dates, and stores all food stuff

· Uses food preparation equipment in a safe, proper manner i.e. blade guards after using meat slicer

· Uses appropriate serving and holding containers on a consistent basis

· Budgets time appropriately to complete daily assignments

· Prepares cold salads according to proper recipes…tuna, chicken, coleslaw etc.

· Prepares all tallied items for patient tray-line

· Conducts checklist at least once a week with management

· Ensures that all foods are cooked in correct manner

Qualifications:

· High school diploma/GED

· Culinary school certification preferred

· Accredited culinary school certificate preferred

    · 4 years of culinary experience preferred
